I can understand you not wanting to do the Trans-Sib right now BUT please please please hear me out on this - in fifteen months of travelling it was one of our favourite experiences - and that was with preschoolers and a half dozen more kids. You can paint the picture bleak or you can embrace the experience that it is (and to be honest, it was not up there among our bad experiences at all) Don't be put off.
If you're drawn to Spain, had you thought of walking one of or part of one of the Camino routes? You might not get people patting you on the back, but the achievement in itself might help how you feel. And exercise always improves your outlook. It makes for a cheap break too.

If you like lakes, mountains, beaches, architecture, churches, art galleries etc Europe as it all (I include Scandinavia in this) and you would certainly be safe to travel as a solo women.
You could have a wonderful trip to Europe it all depends on how long you have and what the funds will stretch too.
