Yes, there's apparently a JOJO bus doing Hanoi to HCMC (Saigon), about $25 think I have seen mentioned but train and locals buses are pretty cheap too.
HCMC to Thailand, you will not find a train until you get to Thailand at the Cambodian border but interesting boat/bus options as you'll find some details of in talesofasia
