Nicola,
You are going at exactly the right time of year. The summer monsoons will be over and you get perfect sunny days up in the mountains. I did a similar trip a few years ago and after landing in Bombay, took the train to Varanasi, which was a long 30 hours trip, but an introduction to life over there. I spent a week exploring that amazing city before heading up to Pokhara and the Annapurna Circuit. I had a great time on the Circuit and would recommend it as it is fairly long, you never backtrack, you don't need to carry much gear and there are guest houses all the way around. The mornings and nights will be cold, days about 70f. As the weather got colder I moved down through India to Maharastra, Karnataka and Goa. The coast has awesome weather in December / Jan and I loved it. Some of the main things I suggest for India are : learning to relax, letting go of time / schedules, watch your drinking water, be adventurous and explore places not in the guide book.
