What's the best way to go about insuring that my water while traveling for 3 weeks in Southeast Asia will be safe? Iodine? Boil water (we're not going to carry pans in our backpacks)? What are our other options? What have you done that worked?

You can get bottled water pretty cheap just about everywhere.

I do carry a small "electric coil thing" to make hot water for coffee, had one of these things for over 10 years. Place the little travel coil in a cup of water and plug it in. In a minute or so you have hot boiling water. Real cheap! (Magellan makes one.)

Beer and bottled soft drinks are plentiful. Lots of little Seven Eleven type stores all over this part of Asia.

Some local tap water has a high "metal" content. Some of the locals drink bottled water pretty often too.
