I've heard about all kinds of scuba/conservation volunteer projects in the Philippines, Australia, etc. but haven't seen anything about the Red Sea. Any ideas?

I'd suggest to mail some of the dive operators in Hurghada / Safaga / Al Quesir
for voluntary work, although I think any work for Hurghada itself is far too late. Try save the rest!!!
