I'll be arriving at Nairobi airport around 10pm. What are the best ways to arrange transport the hostel?

I made arrangements through East Africa Shuttles to be picked up at the Nairobi airport. You can do it all via email (info@eastafricashuttles.com). A driver was waiting for me right outside the baggage carousel area, holding a sign with my name written on it. For 20USD he dropped me off at my hotel in downtown Nairobi.

I took an official airport taxi. It's expensive but reliable. After you clear customs/baggage claim, there is a small booth on the right hand side for official airport taxi. If you go further (ie. closer to the exit doors), then its taxi touts. After I booked it, the lady walked me out the door and to the taxi so that the other taxis knew we were taken.
A taxi from JKI airport to pretty much any hotel in Nairobi should cost 1000 kenyan shillings. about $12-$15. there are usually plenty at the airport. let me know if you need any more info.
