I'm heading to South America for 2 months in July and am going down through Ecuador, Peru, Bolivia, Argentina and Chile - It's going to be mostly an adventure tour and I will need cover for altitude as I'll be doing the Inca Trails.

I'm originally from the UK but am currently living in Chicago, Illinois, USA, and am finding it hard to find anywhere that does decent Insurance to cover me...

I was hoping someone had some suggestions for places that would do decent cover?

Have a look at World Nomads. I had real trouble finding a company that wasn't bound to one specific company. These guys were great, very helpful on the phone with all my inane questions and easy to buy the insurance online too.
I don't know about cover for trips to high altitude but I seem to remember that they covered many types of activities that other insurance companies deemed 'extreme sports' and therefore not covered.

You can also try Latour: www.latour.com , New York based company. They can book at least a part of your trip (accommodation and ground transportation) and you can buy insurance form them, as I did once when I was traveling to South America. Benefits are really excellent. Along with the regular travel benefits their plan offers concierge service, nurse on-line help and language interpretation. They offer Inca Trail Tour as well so it must be covered. Check it out.
