Hi:

I noticed the conversion rate in some SA countries like Argentina is triple.

Do you recommend bringing U.S. dollars (theft risk) or using bank and credit cards?

I always use cards, find them much easier than carrying cash. Although I always have some Euro in case of emergency.
I've been seriously ripped off a few times changing money.

There is a theft risk with both credit card and cash, but you have cancel the card if it is lost or stolen. So cc is the way to go. Bring enough cash to tide you over a couple of days in an emergency and always check about the availability of cash machines if you are going off the beaten track.
