What's the difference?

My understanding is that you write posts which appear chronologically on your home page, but then pages can be used to group different posts (ex: by country). So how is this any different than assigning a category to your post? And if you have already written a post can it then be assigned to a page?

Okay, here's my understanding... "Categories" are what you assign to individual posts to group them together in some way. "Pages" can be used in a similar way, but they're better used as more permanent posts (i.e. not sliding down the blog as you write more posts) like the "About Me" section or something about your itinerary. Does that make sense? If not, or if you have more questions, I'll have to ask Hydro to step in and take over, as that's about the extent of my blog knowledge right there.
