I get notifications for a bunch of different threads, but in the past week or two (maybe more), I started getting daily emails, showing me how many posts each thread received--every single post, including something I subscribed to several years ago that no one has posted since then. I just want to get an email if something has been updated, not an email of all of my thread subscriptions.

Is there a way to change this?

Click on the 'Go' tab, select the 'Personal Zone' & 'Notifications' and you can unsubscribe from anything you don't need/want to follow anymore. Sounds like you're getting a daily email digest of some threads.

Is there a way to get off the daily email list somehow? I want to get updates if there are any, but I hate this stupid daily email. The only way I see now is to go in one at a time and click and click and blah blah blah.

You can batch edit in your 'notifications' admin so you can check a page worth of threads and delete those notifications. If you just want to edit them so you get an immediate notice and not a daily one, then yes, you will need to do it one by one in those cases.

Did you subscribe to the daily digest on all those posts or did this happen all of a sudden? If so, approximately when?

This is really annoying. It just suddenly happened, maybe three or four weeks ago, maybe more. I am going to unsubscribe to everything b/c it's really a pain in the ass and I didn't do anything different. Whatever.
