Knows What a Schengen Visa Is

I am married to a beautiful Islander who was born in the little island of Old Providence (in the middle of the caribbean). I have been there a lot of times, and I've lived there too.

This is some ral fine cuisine.

There is a typical dish that is called Rundown.

Its a rich plate prepared with Coconut milk, hot peppers, fish, congs, Plantain, Potato, Sweet potato and a special mass called dumpling. It is a real treat.

The also have the Garlic Crab Claws (made with Black Crab, a unique delicacy that lives exclusively in the island.

With crab you make several things, including the famous Crab Pasta that tastes like if it was made in heaven and brought by angels.

Lost of fruits too. While doing any sport you will find the fruit of the season that doesn't cost a bit. I found it ridiculous when I was in Germany , that I had to pay 5DM for a pound of Mangoes. Of course here things are different, but sometimes we just don't know what we have.

Just an invitation, go to the islands. It snot just a great place for vacations, its also a fantastic place for your appetite!!!

sounds tasty!!

I no longer want to live in a place where I cant get fresh yummy fruits.... we got mango, papaya, tangerine and avocado in our yard, all in season right now... well, the tangerines are about done but the avocado tree looks like a green chandelier right about now

almost.... lunchtime!!

I absoluely love Caribbean cuisine. I've never been a big fan of Mexican, or other spicy latin American cuisines (not that I can claim to be an expert) so I was hesitant to try caribbean. But, not that I've had it - i love it! The fresh fruits and flavors! Yummy yummy yummy !

Got any good recipes you care to share?

I loooove Caribbean food!!! It's even vegetarian friendly!!!

I can eat rice and beans with fried plantains and fresh cheese 3 times a day and I'm normally a 1 and a half meal a day girl. In Cuba I indulged in the seafood as well, fresh lobster and tuna steaks. God, those people can cook. And don't forget the fresh tropical fruit batidos (mango is my favorite) and avacado....Oh the avacados!!!

None of these foods are made as well here. Frown The plantains are too dry, the yuca too tough and the avacados...well, they're just a little depressing...small and bland. I can not wait to get back there and eat. I never lose weight in that area like I normally do while travelling.

Oh yum! I'm a big fan of carribean cuisine. A lot of the dishes there are similar to Filipino dishes I grew up with, especially with the use of coconut and plantains in cooking. I would be right at home there for sure!

Does anyone know of a good site for Carribean recipes that are tried and tested?

my parents are from trinidad and my favourite, favourite, favourite food EVER is callaloo stew:

callaloo leaves (tops of the yucca)
okra
garlic
coconut cream
crab

creamy delicious weirdlooking mmmmm. but PLEASE eat it on rice, not as soup like those crazy jamaicans!!!

gypsysoul - i don't know about online, but the best cookbook i have ever found is the "Naparima Girls Cookbook" which is from a school in tdad.

Sounds great!

Got a question for you... Are sweet potato fries a local cuisine or are they an invention up here? Went to a Jamaican place a while back and they had them... few weekends ago saw them on a menu somewhere else.

Tried doing some here, gotta slice them thin!
