I remember seeing a travelchannel program about Florence and I think it was Ian Wright that went to Florence and I think he tried something called panino al lampredotto. It is a tripe sandwich
 Has anyone tried this dish and what it is like?

Sorry, this doesn't answer your question but I had to say that tripe is disgusting. I remember my mother making it when I was younger because my father loves it. The smell is the worst! It would make me sick and it took what seemed like days for it to vanish from our apartment. Blech. Bad memories.
