As promised in the chat room....


Mango Pie

Ingredients

2-3 Graham Cracker pie crusts
1 can mango pulp (basically 3 cups mango pulp)
3 envelopes unflavored gelatin (preferably knox brand)
3 cups sour cream
8 oz cream cheese
3 cups boiling water
1 cup sugar

Method

Dissolve gelatin in boiling water.
Blend cream cheese, sugar and gelatin mixture, fold in sour cream and blend.
Add mango pulp and stir, pour the mixture into the pie crusts and refrigerate for 3-4 hours.

(this was a recipie my cousin sent me...I changed the original version a bit by using less cream cheese. I dissolve the gelatin in boiling water and add to mango pulp and then add cream cheese to it...I stop at the desired taste).

I saw this and the thought of the graham cracker crust convinced me to go buy all the stuff for it. I had to improvise, and there's some yogurt in there, but it is looking really good.

Oh! It was good. I'm always substituting things, and I never tried this the original way, but I liked it.

I think I made 2/3 of that recipe, and ended up using 1 cup of sour creme (actually Mexican sour creme? which I think is more liquidy) and the rest plain yogurt. I couldn't find creme cheese and wanted that pie!

That gelatin is a neat ingredient. I don't make a lot of pies, but I have never used it before, and I think that made it all hold together nicely.

Madhu, I make this recipe too, but omit the pie crust and less sour cream so that it is a little thicker, and it turns out like a thick mango mousse that you can scoop into sorbet cups for a light summer dessert.
