Plantains fried in palm oil instantly transport me back to Central Africa.

And the smell of potatoes with roast cumin mingles in my mind with diesel fumes on a dusty evening in a bus station somewhere in North India...

Do you have any particular dishes/tastes/smells that trigger memories of the road? What are your flavours?

I think is this a great thread. I can't believe it hasn't gotten more of a response. Frown

I will contribute that I remember eating gazpacho delicioso in Cordoba in well over 100 degrees F, and feeling deeply relaxed, calm, still (e.g., not stressed, worried, anxious). I try to remember this feeling when I can't sleep.
