We'll be in the car (except for sleeping) for about a week on our way to Mexico (Mayan Riviera). I have lots of problems finding food to eat when travelling on the road, so I try to take some healthy stuff with me, but wouldn't mind some ideas.

I'm not sure if I'm gluten intolerant but it's been said recently that I'm showing some signs. I also am lactose intolerant though I take Lactaid since I need to get more calcium

Besides rice cakes and peanut butter, what else can you all recommend that won't go bad?

There are grocery stores all over mexico, and most of them are the kind you can walk in and pick what you need. if you have a car you have the perfect excuse to go shopping.

Are you really alergic to corn? They have great Tortillas and beans in Mexico, and you can cook them on burner stove.

They have tacos available in restaurants, and if you take the pills, you might get away with enchiladas.

If you're a vegan, well, you know more about what you can eat than I do. Mexico is a meat country, and its not very friendly to vegetarians unless they cook a lot of their own food. With this in mind, I'd say bring a gas stove cooker and cooking supplies with all the food you like to make for yourself at home. Fruits and vegetables are quite good fresh in Mexico, most of the time.

Rice is always good, and Tortillas are dirt cheap(well, not that cheap, but surprisingly so. Just don't eat a kilo a day, or you may get fat)

Meat wise, a lot of the meat there can be tough, and the best cuts are not cheap in the least. I suppose that;s why a lot of Mexicans live on rice and Beans, with chicken. Its a complete meal.

A note on cooking beans: The best recipies have at least 4 spices, onions, and other vegetables. It is NOT just putting beans in water. If you do that, I guarantee you you'll be off of cooked beans forever.
