1.Gong Fu Method, you will need an unglazed clay pot to be in a real “Gong Fu” mode. However, a ceramic teapot will do just fine.

Step 1, Rinse the Teapot with hot water.

Step 2, Fill the pot with enough tea leaves to occupy approximately 1/3 of the teapot's total volume.

Step 3, Fresh boiled water (or hot water depends on what kinds of teas you are using) should be poured into the pot until the leaves are covered. Immediately pour the water out and discard it.- You do not need to perform this step. It is only required for a "Gong Fu Wannabe" type.

Step 4, Fill the teapot with freshly boiled water and replace the lid (You can also pour the boiled water over the pot at this stage, if you are a “Gong Fu Wannabe”). After no more than 10-30 seconds of brewing, the tea should be poured completely from the pot.
Drink the tea. Repeat step 4 to have further brews. With each subsequent infusion, the amount of time the leaves remain in contact with the water should be increased by approximately 30 seconds. Good tea will produce a minimum of three infusions.

3.Just regular: you may also use a teacup with a lid as a filter to prepare teas. –In this case, you can make approximately 150 cc tea with 3 GM of loose teas. Brewing time is approximately 5 minutes in this case.
Don't over brew your teas.
Water temperature table.
Type of teas Water Temperature
Green tea 75℃
Jasmine oolong tea (or similar teas) 85℃
Oolong teas 100℃
Chin Hsuan, Vinca Rose & Tsui Yu teas 95℃
The boiled water is 100℃. Let boiled water sit in the kettle for 1 minute at room temperature, the water temperature will drop to approximately 95℃. Let boiled water sit in kettle and leave the lid open for 5 minutes at room temperature, the water temperature will drop to 75℃ to 85℃.
