I just found this submission call in the WritersWeekly.com newsletter. If you don't subscribe, sign up. They list freelance and staff writing jobs all the time in addition to selling other writing advice online.

Hi Jared,
Make sure that you contact them as soon as possible with your interest in doing a book. If you wait until after your trip, they could've given it to another writer. Usually if they put a call out now for writers for specific book titles, a publisher is trying to fill it as soon as possible. They have a book in mind, and they want someone to write it. You'd need to get their guidelines, a contract, and details before you set out on your trip.

I sent them emails and I'M waiting to hear back. I leave in 4 weeks.
I have the opwning page done.
Hopefully I'll hear something soon?
