Hoping to extend a stay in Italy

Hey Guys,
I'm new to this, so if I'm posting in the wrong place, apologies in advance and guidance much appreciated.
I'm an American and without a drop of Italian blood in my veins, and yet, I am at home when I am in Italy and homesick while I'm in the country where my passport was issued. I'm doing all that I can to remedy the situation.

In September, I'll be leaving for Florence and a three-month internship in travel writing (organized by Global Experiences). In a perfect world, my employers would fall for me and sponsor me, but I want to be realistic and to have some sort of backup plan.

Ergo, I wondered if anyone out there might have advice for an aspiring expat with Tuscan/Lombardian tendancies. Oh, I have a BA in English/Writing and an MA in Roman Literature. I would like to draw from one or the other credential... in a perfect world.
