Hotels/Villas/Resorts in south or Central Bali

Anybody has any ideas for some nice places to stay (maybe $80) in Bali?
We will be travelling there July 4-11. The first night and the last 2, we will be at Jimbaran.
For the other 3, we are flexible. I think somewhere in central Bali might be nice...? We're not particularly keen on a vibe like Kuta, except for perhaps a 'curiousity' sojourn during the day.
Neither are we hung up on the beach - we're living in the Maldives for a while, so that should explain it!
We like walking, exploring, 'living' the atmosphere of a new place...yes, and access to some nice restaurants.

Your suggestions would be really welcome!

I would have suggested Seraya Shores but you're not as keen on a beach location.

Thanks! Seraya Shores sure sounds good - perhaps we could just start off there for a night, to have a place to put our bags down :). Then play it by ear...
I will now look for help on the Bali Travel Guide - thank you for the suggesion.
