I find the beaches on the West coast a lot nicer - and quieter - than the ones on the East coast. Cable beach (Broome) is absolutely fantastic, but beware of jellyfish (when I was there, about 4 people were stung and had to go to the hospital!) And 2 days later = shark attack. But it's so worth the risk
Turquoise Bay is very pretty too. But beware of the strong currents as they can bring you very, very, very far.

Gday,
i found beaches in northern NSW around Byron bay nice, broken heads, and a little further north around coolangta called Fingal head beach.
I now live at Agnes water and Town of Seventeen Seventy (1770), and the beaches are also very nice , good climate. the beaches here some are long and some are small with nice rocky headland at ever end of the beaches, kinda privite.

I am glad we have got back to calling it Fraser Island.
Some of the islands off Dampier are great too but again there are sharks around. Still you need to just be careful -look at the road toll. You still drive don't you.
As has been said before most animals/insects aren't setting out to hunt you. They attack through fear. Pay attention to what locals say (they are still alive so they must be doing something right) and if none are around err on the side of caution.
If your going near melbournme there are some good dives around Queenscliff but again its wetsuit for sure as the water is chilly even in summer.

OK, I'm lazy and didn't read the other replies... but my vote is for north coast of NSW and south coast of QLD.
My pick in QLD is the sunshine coast (ie. Noosa area) because it's north enough to be warm but south enough not to have jellyfish
And not as overly crowded as the Gold Coast area an be.
My pick for NSW is the north coast because it's warm enough, but it's not Sydney. I tend to go to the south coast of NSW because it's near where I live, and while it's rather pretty and all it's also bloody cold.

Id have to say Palm Cove beach about 20 mins north of Cairns is a beauty. In fact, all the beaches inbetween Cairns and Port Douglas are amazing and definitely way better than anything in the towns themselves. Only problem is stinger season between around December-April, although there are always stinger nets to swim in.
A hidden gem would include Wreck beach just near Port Lincoln in SA-if you can brave the freezing water, its worth it. Its incredibly long with white sand dunes and mini rocky cliffs, and you about 2 other people to share it with.

Some of the best beaches are just north of Sydney on the Central Coast, Terrigal, Avoca and North Avoca, I was Dissapointed with the Beach at Port Douglas, although the Town is well worth visting. Byron Bay is beautiful but the locals are all up themselves IMHO.

I liked Rainbow Beach, don't think getting to far into the water was a very good idea but the beach itself was quality.
Most people go straight through on their way up the coast so the place was practically deserted, I had about 20km of beach all to myself for the day.
