Should this be fine?
I have an exit flight from Dublin and plenty of flights after that to various European countries (from Dublin to France-Spain-Italy) and also Morocco for ten days or so before returning to Europe (Germany) for a few weeks. In February I than go to Thailand.
Will customs be okay simply with a flight that goes to Thailand and a bunch of other inter Europe flights?
Do customs only care that you leave the EU, regardless of where it is you go to next? or even just there own country (thinking this is more likely)?
Should I put this last minute fear of not having a return back home on the back burner? Is my flight to Thailand enough? To satisfy customs in Ireland?

You should have no problem with that, just as long as I'm reading your question right.
Here's my experience with customs in Ireland:
When I arrived on a one way ticket from the US I had a connecting flight from Dublin to Frankfort. When I got to customs, the official asked how long I would be in Ireland. I told him 20 minutes, he stamped "In transit" on my passport and I ran off to find my connecting flight.
Coming back through Ireland at the end of my trip to see family before I went home (but I didn't have the flight out yet), the customs officer asked how long I would be in Ireland. I told him I wasn't sure but only a few weeks, as I was staying with family. He stamped my passport for a month later, like that was my "get-out-of-Ireland" date.
So if you have a connecting flight, I'd say you're golden. Good luck!

I flew into Dublin on a one way ticket with another one way ticket booked to Madrid, and they didn't say anything to me. Actually, the immigration guy was super friendly and talked to me for a little while about how much he loved Madrid and how he couldn't wait to go back.
So, as long as you have a flight out of the country, I doubt they'll care.

Note that some airlines will not let into Thailand without an onward ticket. Thailand requires you have a flight out but this rule is not universally enforced. Air Berlin didn't care when I flew over but BA cared when my friend flew over and United cared when my friend flew over too. So just be aware.
