I don't know about a whole week there! That's what we were planning on too. I can highly recommend the drive to North Cape Lighthouse and we had an amazingly good seafood meal at this little restaurant overlooking the point. And about twenty minute drive from there, we camped on a farmer's field, on one of the ubiquitous cliffs, hanging over the edge of a turbulent sea during a ferocious rainstorm, with a bonfire throwing sparks into the air. It was so cool, but not necessarily on a planned itinerary!
The best thing was completely unplanned and that was our premature departure from the island after only two days. There is a ferry that goes to the Magdalen Islands. I bet you have not heard of them, and I had not either, if it were not for a chance photo and a comment from another traveler just like I am now passing along for you.

wow, we are just starting to plan what will likely be a two week bike tour there, and I am soooo excited! I wouldn't think a week to be enough.
I've just started reading up on it, but I know it is extremely beautiful, has some of the friendliest people, and has a very Celtic/Acadien culture.
Oh, and that Anne of Green Gables stuff, which I'm not remotely interested in. (bit of overdose while growing up...)
What to do?
Well, we plan on taking loads of pictures (we're kind of amateur photography buffs), get off the main track and find whatever neat vantage points we can....
bike, hike, sight-see (museums and things - there are tons). take in some shows- music, theatre, dance all seem to be popular - keep in mind that tourism is one of their main industries. and.... just relax!
I realize that bike touring isn't for everyone (I'm still quite new to it), but for us, seeing the region on our own time, at a slow pace, enjoying things we wouldn't normally by car travel... that's the point of it for us.
there's also canoeing, camping, sea-kayaking, many historical sites, arts and craft boutiques/workshops, golf courses, festivals... I honestly can't imagine running out of things to do, but I guess that depends on your interests (and maybe time of year, as a lot of tourism is seasonal).

2 week bike tour? I wouldn't do that in PEI
there are some hills. but not so scenic.
i think it would be reasonable to do some biking there but i would try to involve cape breton. more hills for sure but better scenery
I Drove the island and was happy enough to spend less than 2 full days......it was on the cool side- late May/early June so not nice summer weather.
Also went to Hopewell Rocks. Nice.
But the best part was hanging around Cape Breton.
