Welcome to Boots Domino, and yep thewet season up north ought to be in full swing with high humidity - think being in an open air sauna type humidity.
Other than that , there's just the possibility of the odd cyclonic activity and some areas in Kakadu NP will be off limits - main tour operators close down their outback style operations about December to April because of possible restrictions in overland transport.
Other than wanting to see the top end, or leaving from Darwin for Asia, main reason for travelling Adelaide to Darwin is Alice Springs, Uluru, the centre etc.
January to Februrary is about the worst time of the year to head there too, or anytime between November to April for heat.
So you ain't got much going for you in the way of weather.
Personally, I'd be spending the time in the south, maybe even having a look Tasmania way and then flying direct to Darwin if you are going there to leave for somewhere else.
