Ali, I understand your eagerness to hop on deals, but there is a danger in overplanning. What if you love a place, want to stay longer, and feel like you need to leave or else lose money. What if you find a place not to your cup of tea, want to leave, but feel like you can't because you already have things booked?
You are hitting A LOT of places. I have a feeling you'll end up wanting to cut a few places out...so you don't want to overplan/prepay for too much.
I will disclaim just looking at your tentative itinerary exhausts me, and I think you'll end up spending a lot of time in travel. That's your choice to make, but with 2 months you want to have the flexibility to do/not do what you want. I think you also might end up re-thinking your path (I am looking at your Italy - Greece - Spain portion, and that seems out of sync as you will be criss-crossing yourself)
And, this is also my bias, but I think you're shortchanging Sevilla...It'll be so different from the other places you visit in Spain...

Rotterdam is a bit aways from Amsterdam. It will be a tiring day trip, though I suppose you could do it.
I think its worth 2 days by itself, or three. It has a vibrant art scene and the architecture is unique for Holland. One gets tired of red brick 4 story apartment buildings ,quaint homes, and Mies Van der Rohe lookalikes.
Haarlem is always a great place to visit, not to mention the Rembrandt museum. It's 20 minutes away from Amsterdam.
I also like going to the area by the Casino and playing chess. Was it called Max Euweplein? not sure, only its a public plaza with 2 foot tall chess pieces and a board.
