Please share your recipes for ratatouille. I mean the ones you use not something i can find on the web. I can do that too. In fact i do that.

I made some just the other day. This is good for 8 servings.

1 chopped onion
4 crushed cloves of garlic
4 stalks of celery, sliced
1 eggplant, diced
10 Roma tomatoes, quartered
2 sliced zucchini (or Mexican gray) squash
1 sliced yellow summer squash
1 bunch parsley, chopped
2 ounces fresh basil, cut up
Fresh black pepper
Salt to taste
Celery seed to taste
Ground cumin to taste

Saute the onions and garlic and add the veggies one by one, finally adding the seasoning ingredients at the end. Cooking time about 30-45 minutes.

Typically, I just eat the ratatouille plain the first night. The second and subsequent nights, I add some cooked pasta (try ditalini) and some good plain Italian sauce (like Ragu Traditional). Also try with grated Parmesan or Romano cheese.
