After spending a year traveling around Asia I have a much better understanding of what language skills are required to make my trip easier. I have composed a list of words I now memorize when visiting a new country. Some of these aren't necessarily words that I would say but words that people would say to me so being able to understand then was helpful. Anyone have suggestions on additions to my list?
The List:
Hello
How are you?
Fine, and you?
What is your name?
My name is ....
Where are you from?
I'm from ...
How old are you?
I'm 35
Guess how old I am
Can you speak English?
Sorry I don't speak ....
You speak English/... well
Where are you?
What are you doing?
Where are you going?
Have you eaten?
Who?
What?
Where?
When?
Why?
Excuse me
What is this?
What is that?
How much?
Do you have?

Some words I always try to learn before hand:
Numbers, time, how much, do speak English, how do you say (useful for expanding vocabulary), what is this (also useful for expanding vocabulary), food, eat, hostel/hotel, airport, train, bus, bank, thank you, and help (never had to use it but you never know)

I've been studying Thai in preparation for my upcoming visit to Thailand. Don't forget the most important phrase of all:
Khaw bia na khrap/khaa! - Beer, please!

Follow-up post: Learning Thai was really helpful in Thailand. The things around me made much more sense. I was able to more easily get my point across. People were impressed, even with my basic, stumbling abilities, and it opened doors.
Some things that are important, beyond "Hello", "Thank you" and the numbers:
1. Know how to recognize and respond to the inevitable questions, such as "Where are you from?", "What kind of work do you do?", and "How did you learn [Thai, Hungarian, Inuktitut]?" Know how to say your profession and/or major in the target language.
2. Learn conjunctions: things like "but", "because", "therefore", "if", and "and then" go a long way. So do simple fillers like "Well..." and "Really?"
3. Learn to recognize compliments. Thais might tell you your Thai skills are "geng"; Chinese might say "lihai"; Indonesians "pintar". Then know how to either thank them or politely contradict them: "Oh, I'm not so good yet!"
4. Learn "power phrases" (phrases whose responses will teach you things): "What's this?" "How do you say?" "Would you please repeat that?"
But get out there and talk. Don't be afraid of making mistakes or looking stupid. Don't be a perfectionist; be an imperfectionist.

It's important to know the Chinese characters for man (男) and woman (女). But occasionally in Chinese-speaking areas you may come across a women's toilet that says 男賓止步 (essentially meaning "Men: halt!"). It can be confusing to the initiate! (Especially when combined with the pseudo-English "Men's Stop"! Yes, I've seen it!)

Many folks find themselves using hand gestures. Just remember that in certain countries gestures used in the west may be offensive or have opposite meanings.
